Brasilian Chicken Stroganoff

If anything is a comfort food for my family, it is this simple Brasilian Chicken Stroganoff. It is the first leftover that goes the next day when everyone is heating up food for lunch. It might be the only meal (besides Mexican--anything Mexican) that they will ask for by name.

To make this recipe practicable to my college-bound sons, I have eliminated some ingredients (mostly spices they will not likely have access to) and simplified whenever possible. The recipe that follows is a combination of several recipes we have used in the past as well as Carrera family modifications.

BRASILIAN CHICKEN STROGANOFF

Ingredients

2 lbs chicken (diced, sliced or shredded-- my kids very much prefer big chunks and are not shy about telling me when I "didn't do it right.")

2 cloves garlic minced
1  onion, diced/chopped
salt
1/2 teaspoon oregano
2-3 tablespoon ketchup or tomato sauce
1-2 tablespoons mustard
1 cup chicken broth
1 cup cream

Instructions

Fry (medium heat) the chopped/diced onion and garlic in a few spoons of oil until tender. When done add the chicken and more oil if needed. Cook until the chicken is completely done, you could brown the chicken if you like. Add the oregano, salt. ketchup, mustard, and the chicken broth. If it looks dry, add more chicken broth. Finally, add the cream (or in a college dorm whole milk) and season to taste with salt and pepper.

Serve over rice with a handful of shoestring potato chips (batata palha in Portuguese..it sounds better.)
