Aunt Dixie's Pork

We call this recipe Aunt Dixie's Pork. The recipe comes by way of my wife, who spend a few years living with her Uncle Matthew and Aunt Dixie while getting her nursing degree. This is one of our comfort foods. The recipe is easy with only 3 ingredients (salt and garlic don't count.)

Aunt Dixie's Pork

1/3 C Brown Sugar

1/3 C Soy sauce

1/3 C mustard

Garlic and ginger (if you want)

a few drops of a hot pepper sauce like Tabasco

Mix everything together and slather it over your pork. We have used pork chops, pork chunks, pork ribs...

Usually, we place everything into a crockpot until the meat is fall off the bone tender. The liquid makes a nice sauce to ladle over the white rice. We have also grilled the meat (discard the liquid in this case) which results in a drier meat. We typically serve Aunt Dixie's Pork with a salad or two and white rice.

(In case you don't know how......

White Rice

1 cup uncooked rice

2 cups hot water

Salt and garlic to taste.

Fry the rice and the garlic a little bit and then add the two cups of water. Add salt and taste the water. The rice will taste like the water. Cover and bring to a boil. Reduce the flame and cook for 20 minutes or until the water has been absorbed.)
